Honey Pecan Crusted Chicken


Tip:  Read directions completely before preparing.

Ingredients:
1/4 teaspoon salt
1/4 teaspoon pepper
3 chicken breast
1/3 cup Honey Mustard Dressing ( I used the Ken's Steakhouse Dressing)
3/4 teaspoon paprika
1/8 teaspoon garlic powder
1 3/4 cups Panko bread crumbs
1/2 cup honey roasted pecans, finely chopped
Cooking spray

Directions:
Preheat oven to 400°F.

Lay the chicken breast on a cutting board, and fillet the breast into a thinner layer, by laying the knife flat and carefully filleting into two.


Sprinkle salt and pepper evenly over chicken and set aside.

Combine Panko bread crumbs and pecans in a large bowl and stir well, then set aside.


In a medium size bowl, combine honey mustard dressing, paprika, and garlic powder and stir well.


Add the chicken breasts and coat them completely with the mixture.


Dredge in Panko mixture.   Place chicken pieces on a large baking sheet coated with cooking spray.

Lightly coat the chicken with cooking spray and bake at 400 °F for 30 minutes or until done.  Enjoy!

Tip:  You can just eat them with Honey Mustard dip, in a sandwich with melted provolone cheese or in a salad as shown in photo! I added shredded Romaine lettuce, Blue Cheese crumbles, dried cranberries, bacon bits, chopped honey roasted pecans and Honey Mustard dressing!
