Pico de Gallo


Tip:  Read directions completely before preparing.

Ingredients:
1/2 medium whole yellow onion, chopped
1 extra large whole tomato, chopped
1/2 cup, cilantro, chopped
1 large Jalapeno Pepper, chopped (add more if you like it spicy)
1 teaspoon salt
2 cloves garlic, finely minced
pinch pepper
1 teaspoon, olive oil
1/2 small lime, squeezed

Directions:
Combine and mix all of the above ingredients well in a bowl.  When you chop the onion, tomato, cilantro, and jalapeƱo, you want to chop them but not too fine.  See photo.

You can use Pico de Gallo for tacos, soups, in Frijoles a la Charra, Nacho's, Quesadillas, on your eggs, steak and so much more! Use as a dip for Tortilla chips!  Add to mashed avocadoes and make a Avocado Dip!  I add water because the liquid from this relish is great and keeps it nice and moist!  You can also add chopped mango, jicama or even watermelon for a variety of tastes! Experiment!  Enjoy!
