Labor Day Grilling! Beef Skirt Fajitas!


Beef Skirt Fajita Marinade

The Beef Skirt Fajita meet has been marinading since last night.  Here's the marinde recipe!  Enjoy the day!

Ingredients:
12 ounces beer (Preferably Amber)
1 cup canola or olive oil
1 small white onion, sliced
1/4 cup fresh lime juice
4 large garlic cloves, crushed
2 tablespoons Worcestershire sauce
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes

Directions:
Combine all ingredients and mix well. Pour marinade over meat in shallow glass, plastic or other non-reactive container (a 1-gallon plastic zip-top bag works well). Refrigerate overnight or up to 24 hours.

Makes enough to marinate 3 pounds beef skirt (6 generous servings).

Skirt steak is thin and doesn’t take long to cook. Depending on your grill, it should take 3 to 4 minutes per side for rare, longer for medium.

Hi Lupe! I am going to make this today- I really like that I have all of the stuff already in my kitchen. It is nice to use ingredients I am familiar with.
