Bacon and Green Onion Cheese Ball


Tip: Read directions completely before preparing.

Ingredients:

(For Cheese Ball)
1/4 cup brown sugar ham, finely chopped
1/4 cup green onion, finely chopped
1 (8 ounce) packages cream cheese, softened
1/2 teaspoon Hidden Valley, Garden Green Onion Mix

(For Rolling Cheese Ball)
1/8 cup real bacon Bits, (I use Oscar Mayer)
1/8 cup green onion, finely chopped
1/4 cup Colby Jack or Mild Cheddar cheese, finely shredded/cut

Directions:

(For Preparing Cheese Ball)
In a medium-size mixing bowl, combine green onion, brown sugar Ham, cream cheese and Garden Green Onion Mix. When mixed well, form ball out of the mixture. Cover with plastic wrap and refrigerate 3 to 4 hours, or overnight.






(For Rolling Cheese Ball)
Before serving, in a medium-size mixing bowl, combine the real bacon bits, green onion, and cheddar cheese, and roll the cheese balls in the mixture.  Enjoy!




 Tip: This cheese ball is great with buttery crackers!

Black Eyed Peas with Bacon


Tip:  Read directions completely before preparing.

Ingredients:
8 oz bacon, cut into 1 inch pieces
2 – 15.8 oz cans black eyed peas
½ large yellow onion, chopped
3 large cloves garlic, minced
½ large tomato, chopped
1/2 teaspoon freshly ground comino seeds (cumin)
4 cups water
1 package Sazon Goya (Cilantro con Achoite) seasoning
1 teaspoons salt

Garnishes:
cilantro, chopped (optional)
Serrano pepper slices (optional)
Cacique Queso Fresco, crumbled (optional)

Directions:
Open 2 cans of black eyes peas, drain, rinse and set aside.

In a large 3 ½ quart sauté pan at medium high heat add bacon, and fry until crispy.  Remove ¾ of the oil.  Lower heat to medium.



Add chopped onions to pan and sauté with bacon for 2 minutes.

Add minced garlic and sauté for 30 seconds.

Add tomatoes and sauté for 2 minutes. Stirring constantly.

Add beans, water, pack of Sazon seasoning, salt, and comino and stir.




Bring to a boil, then reduce heat to low, letter simmer for 25 minutes, then serve!  Top with garnishes!  Enjoy!!!!



Tip: Remember, black eyed peas on New Year's Day are thought to bring good luck for the entire year!

Bacon & Biscuit Breakfast Casserole


Tip:  Read directions completely before preparing.

Ingredients:
10 eggs
1/2 cup milk
16 oz refrigerated breakfast flaky biscuits, ( not cooked)

4 green onions
2 cups shredded extra sharp cheddar cheese

1 lb center cut bacon

Directions:
Mix your eggs and milk in a large bowl.

Cut each raw biscuit in four and add to bowl.

Fry bacon, place on paper towel, set aside and let cool.

Chop scallions, and shred extra sharp cheddar cheese and add to bowl.

Crumble bacon and add to bowl.


Gently mix and pour into a 9” x 13” baking dish.  Bake at 350 for 35 – 40 minutes.  Enjoy!!!!

Bacon Wrapped Potato Cheese and Jalapeno


Tip: Read directions completely before preparing.

Ingredients:
1/2 large Russet potato, sliced paper thin
1/3 cup green onion, chopped
1/3 cup white onion, finely chopped
1/3 cup shallots, finely chopped
1 jalapeno, stem and seeds removed
1/2 tablespoon butter
6 slices bacon, cut in half
5 oz Queso Fresco

Directions:
Using a mandolin slice the potato into very thin slices, so that you can roll them. Place the slices in a large bowl and cover with water.  Add salt and then set aside. This prevents potato from turning brown. (It is best to use a large potato so that you can roll the ingredients in one potato slice.  If you have only a small potato, you can lay them side by side as shown in photo.  Preferable one large paper thin slice is suggested.  I only had small potatoes when I made this recipe.)



In a skillet, add butter and melt over medium heat.  Add green onion, white onion and shallot and sauté until soft. Remove from pan and place in bowl then set aside.


Remove stem and seeds from Jalapeno, cut in thin slices and set aside.


Cut your cheese as shown in large slices as shown.



Lay potato slice (slices) on a flat surface.


Add 1 teaspoon of the onion mixture, jalapeno and cheese.


Wrap the potato around the ingredients.

Wrap 1/2 slice bacon around potato and lay on a large sheet pan with parchment paper. 



Bake at 400 degree for 30 minutes or until bacon is crispy.  Enjoy!
