Atlantic Salmon Patties


Tip:  Read directions completely before preparing.

Ingredients:
10 ounces, (2 5 oz cans) canned, Atlantic salmon
1 tablespoon Creamy Deli-style mustard or Dijon-Style
1 tablespoon chopped capers
2 tablespoons snipped chives

1/8 teaspoon cayenne pepper
3 tablespoons Panko bread crumbs
2 extra large eggs
1 1/2 tablespoons olive oil


Directions:
Drain the salmon and put into a large bowl, breaking it up with a fork.



Whisk eggs in a small bowl.  Then add mustard, capers, chives, cayenne pepper, and Panko breadcrumbs, mix well.


Add egg mixture to salmon and gently mix.


Heat oil in medium size, nonstick skillet over medium heat.  Add two tablespoons of salmon mixture, forming into patties, approximately 3" x 3" x 1/2" thick.  Fry in two batches.


Fry, 6 - 8 minutes, until starting to brown.  Carefully turn with a spatula and sauté another 4 - 5 minutes.


Remove and serve with tarter sauce on the side.  Enjoy!


Servings:  About 8 patties

Tip:  You can enjoy these patties with just Tartar Sauce or with rice, a salad or a variety of ways!
